The causes lie in changing work patterns, price and marketing, and the effects reach from individual waistlines to national health budgets. The strongest cause is time. Urban life increasingly means long commutes and double-income households, so the hour once spent cooking has been surrendered to traffic and overtime, and a wrapped burger fills the gap. Price reinforces the habit, since processed meals are often cheaper than fresh ingredients, especially in cities where a plate of rice and stew from a fast food chain undercuts the market cost of cooking it. Marketing completes the circle: children are courted with toys and cartoons decades before they read a nutrition label, building brand loyalty that outlives childhood. The effects unfold in stages. Individually, diets heavy in salt, sugar and refined oil drive obesity, hypertension and type 2 diabetes, diseases once associated with wealth that now concentrate among the poor. Socially, the costs migrate to public health systems, where treating diet-related illness swallows money that could have built schools. There is a quieter cultural effect too: family recipes and communal cooking, which once bound households together, fade within a single generation.
